This step-by-step guide walks you through the entire method using straw pellets and oak hardwood pellets as your substrate.
This is the method I used when I had my oyster mushroom kit business, but it can easily be scaled down for a home grow.
This method will teach you how make 10, 5 pound batches...enough for you to grow your own at home and share with your loved ones!

This method uses a 45/45/10 ratio by weight. That means 45% straw pellets, 45% oak hardwood pellets, and 10% oyster mushroom grain spawn.
The straw and hardwood pellets are rehydrated to specific moisture levels before mixing and bagging.
The combination gives you the nutrition and structure that oyster mushrooms love.
Straw provides a loose, airy texture that promotes fast colonization.
Oak hardwood adds density, nutrients, and moisture retention.
We use Unicorn 10T filter patch bags, which are the industry standard for mushroom cultivation.
Each finished bag weighs approximately 5 pounds.
This recipe makes a 10-bag batch, giving you roughly 50 pounds of ready-to-inoculate substrate in one session.
The reason for using pellets is the substrate has already gone through the pasteurization process, eliminating the need for sterilization and large pasteurization equipment...brilliant!

Before we get into the recipe, you need to understand moisture content.
This is the single most important factor in substrate preparation.
Too dry and the mycelium cannot spread.
Too wet and you invite contamination from bacteria and mold.
Straw pellets need to be rehydrated to 71% moisture content.
Oak hardwood pellets need to be rehydrated to 55% moisture content.
These two substrates absorb water differently, so they require different amounts of water per pound of dry pellets.
Moisture content is measured as a percentage of the total weight of the hydrated material.
So when we say 71% moisture, that means 71% of the final hydrated weight is water and 29% is dry material.

You are making 10 bags, so your total batch weight is 50 pounds of finished, hydrated, inoculated substrate.
Here is how the 45/45/10 ratio breaks down for the entire 10-bag batch.

Now you need to calculate how much dry pellets and water are required to reach the correct hydration levels.
Straw pellets need to be rehydrated to 71% moisture content.
That means 71% of the final hydrated weight is water and 29% is dry straw material.
**Target hydrated straw weight:** 22.5 lbs (360 oz)
- Dry straw pellets needed: 29% of 360 oz = **104.4 oz (6.53 lbs)**
- Water needed for straw: 71% of 360 oz = **255.6 oz (1.99 gallons)**
Round for practical measuring.
**Straw pellets: 6.5 lbs (104 oz)**
**Water for straw: 256 oz (2 gallons)**
Oak hardwood pellets need to be rehydrated to 55% moisture content.
That means 55% of the final hydrated weight is water and 45% is dry hardwood material.
**Target hydrated hardwood weight:** 22.5 lbs (360 oz)
- Dry oak pellets needed: 45% of 360 oz = **162 oz (10.13 lbs)**
- Water needed for hardwood: 55% of 360 oz = **198 oz (1.55 gallons)**
Round for practical measuring.
**Oak hardwood pellets: 10 lbs (162 oz)**
**Water for hardwood: 198 oz (1.55 gallons)**
You need 5 pounds of oyster mushroom grain spawn for the full 10-bag batch.
That works out to 8 ounces (half a pound) of grain spawn per bag.
Purchase grain spawn from a reputable supplier and keep it refrigerated until you are ready to use it.
Take it out about an hour before mixing so it reaches room temperature.
Break up any clumps in the bag by gently kneading it before opening.

Wipe down your mixing tub, work surface, and any tools with 70% isopropyl alcohol.
Put on clean gloves.
Contamination is the number one reason mushroom grows fail, so take this step seriously.
Work indoors in a clean room with minimal airflow.
Close windows and turn off fans.
Every time you leave your workspace, wash your hands (or gloves) upon return.
Measure out 6.5 pounds of straw pellets and place them in one of the 5 gallon buckets.
Heat 2 gallons of water to approximately 170°F.
Hot water serves two purposes.
It helps the pellets break apart faster, and the heat pasteurizes the straw, killing off competing mold spores and bacteria.
Pour the hot water evenly over the straw pellets.
Stir and break up the pellets as they absorb the water.
They will expand and turn into loose, fluffy straw within 15 to 30 minutes.
Let the straw cool to below 100°F before moving to the mixing step.
You do not want to kill your grain spawn with heat.
If the straw feels too wet and water is pooling at the bottom, you can drain off a small amount.
Do the squeeze test.
Grab a handful and squeeze firmly.
You should get a few drops of water but not a stream. That indicates you are in the right moisture range.
In a separate 5 gallon bucket, measure out 10 pounds of oak hardwood pellets.
Add 1.55 gallons (198 ounces) of hot water at approximately 170°F.
Stir thoroughly.
The hardwood pellets will break apart into a sawdust-like consistency.
Hardwood absorbs water differently than straw.
It tends to clump.
Break up all clumps by hand until you have a uniform, crumbly texture.
It should feel damp but not soggy.
When you squeeze a handful, it should hold its shape without dripping. If a drop or two comes out, that is fine. If water streams out, you have added too much.
Let the hydrated hardwood cool to below 100°F before proceeding.
Once both substrates have cooled to a safe temperature (below 100°F, ideally around 75 to 80°F), combine them in your large mixing tub.
Mix thoroughly by hand, turning the material over and over until the straw and hardwood are evenly distributed throughout.
You want a uniform blend with no pockets of pure straw or pure hardwood.
Break up your 5 pounds of grain spawn into individual grains as much as possible before opening the bag.
Sprinkle the spawn evenly across the top of the mixed substrate.
Then mix everything together thoroughly by hand.
Every handful of substrate should contain visible grains of spawn.
Even distribution is critical for fast colonization and reduced contamination risk.
The more evenly you distribute the spawn, the faster the mycelium will colonize the substrate.
Fast colonization means fewer opportunities for contaminants to take hold.
Weigh out 5 pounds (80 ounces) of the inoculated substrate mixture and pack it into each Unicorn 10T bag.
Pack the substrate down firmly but not so tight that there is no air space at all.
You want the substrate to be in good contact with itself so the mycelium can spread easily, but the filter patch on the bag needs room to allow gas exchange.
Fold the top of the bag down and seal it with an impulse sealer about 2 to 3 inches ABOVE the Filter patch. Do a double seal, one right above the first.
Test the seal by gently pressing on the bag, listening for air leaks. Reseal until airtight.
Make sure the filter patch is not blocked or folded over.
Repeat for all 10 bags.
Inoculated oyster mushroom kits- about 2-3 days of mycelial growth- see the white spots?Use masking tape and a marker to label each bag with the date, the mushroom species (for example, blue oyster, pink oyster, golden oyster), and the batch number if you are tracking multiple batches.
This helps you monitor timelines and identify which spawn or technique works best.
Place the sealed bags in a dark, warm location.
You can go the grow tent route, or simply use a closet or open room.
The ideal incubation temperature for most oyster mushroom species is between 68°F and 75°F.
Avoid temperatures above 80°F, as this encourages contamination and can stress the mycelium.
Stack bags loosely or place them on shelving so air can circulate around them.
Do not stack them tightly against each other, as metabolic heat from colonization can build up and raise internal temperatures too high.
Check the bags every few days.
Within 3 to 5 days, you should see white mycelium spreading outward from the grain spawn points.
Full colonization typically takes 14 to 21 days depending on the species, temperature, and spawn rate.
**What to watch for during incubation:**
incubation tent with a small fan and temperature gaugeOnce the bags are fully colonized (the substrate is completely white with mycelium), it is time to trigger fruiting.
Oyster mushrooms need three things to fruit: fresh air, humidity, and a slight drop in temperature.
Cut a large X-shaped slit or a few 2-inch slits along the entire front side of each bag.
Place the bags X-side down submerged in a large bowl of water overnight.
Move the bags to your fruiting area. This can be a simple setup, like a sideways large plastic bin or sideways cooler.

You will see tiny pin-like formations at the slits within 3 to 7 days of initiating fruiting conditions.
These pins will double in size daily!!!
It is so magical to watch!
Harvest when the caps are still slightly curled under at the edges.
If you wait until the caps flatten out completely or start to turn upward, the mushrooms are past their prime.
They are still edible but will have a shorter shelf life and a tougher texture.
To harvest, grip the entire cluster at the base and twist gently.
It should come away cleanly from the substrate.
After the first harvest (called a flush), wrap the kit in a large plastic bag and let it "rest" for a week or so.
Then, recut your X, soak overnight with the X-side down in a large bowl of water, and place back in your fruiting chamber.
Most bags will produce a second flush 7 to 14 days after the first.
Some will produce a third flush, though yields decrease with each subsequent flush.
**Expected yield:** A healthy 5-pound bag can produce 1 to 2 pounds of fresh oyster mushrooms across all flushes.
Your 10-bag batch could yield 10 to 20 pounds of fresh mushrooms.
**Bags are not colonizing after 7 days.** Check your temperature. If it is too cold (below 60°F), mycelium growth slows dramatically. Move bags to a warmer spot. Also verify that your grain spawn was fresh and viable.
**Green mold appears during colonization.** This is usually Trichoderma, the most common contaminant.
It means either your substrate was not properly pasteurized, your workspace was not clean enough, or your spawn rate was too low. Remove the contaminated bag and review your process.
**Mushrooms have long stems and tiny caps.** This means not enough fresh air. Increase ventilation in your fruiting area.
**Mushrooms are drying out and cracking.** Humidity is too low. Mist more frequently or add a humidifier.
**No pins forming after cutting the bags.** Check temperature (it may need to drop), humidity (it may be too low), and light (mushrooms need some light to pin).
Some species also need a cold shock. Place the colonized bag in the refrigerator for 12 to 24 hours, then return it to fruiting conditions.
Start with a proven oyster mushroom species for beginners. Blue oyster and pearl oyster are the most forgiving and fruit reliably across a wide range of conditions.
Always use fresh grain spawn. Spawn that has been sitting for months loses vigor. Order from a supplier who ships quickly and stores spawn properly.
Keep detailed notes on every batch.
Record the date, species, substrate weights, water amounts, temperatures, colonization time, and yield. Over time, these notes become your most valuable resource for dialing in your process.
Scale up gradually.
Master the 10-bag batch before trying to produce larger quantities.
The fundamentals stay the same, but larger batches introduce new challenges with temperature management and workspace logistics.
Once you have a few successful batches under your belt, you are no longer just a hobbyist.
You have a repeatable system that produces a high-value gourmet product.
Many growers start selling at farmers markets, to local restaurants, or directly to neighbors and friends.
