When something goes wrong in a mushroom monotub, bacterial contamination announces itself through smell long before you see visible signs.
Learning to read those odor signals saves you time, substrate, and a whole lot of frustration.
Let me walk you through the specific smells and their matching symptoms so you can catch bacterial problems early.
Healthy mycelium has a clean, earthy scent.
Some people describe it as fresh mushrooms or forest floor after rain.
That is your baseline.
Anything that pulls you away from that baseline deserves attention.
This is the most common bacterial red flag.
It hits you like old beer or vinegar.
When you catch this scent, look for wet spots on your substrate surface.
These wet, glossy, yellow patches are bacterial colonies breaking down grain or straw faster than mycelium can colonize it.
The bacteria produce acidic metabolites that create that sour punch.
Think overripe fruit or cheap candy.
This often pairs with a slimy film across the substrate surface.
Run your finger across a suspect area.
If it feels slick rather than fuzzy or dry, bacteria are winning that territory.
The sweetness comes from specific metabolic byproducts as bacteria feast on simple sugars in your grain.
This is the unmistakable stench of anaerobic bacteria.
It smells like garbage or sewage.
You will usually find dark, waterlogged areas in your substrate.
Too much moisture created pockets where oxygen-loving mycelium could not survive but anaerobic bacteria thrived.
If your tub reaches this stage, it is generally beyond saving.

Smell alone tells part of the story.
Pair it with visual clues for a confident diagnosis.
Wet spot contamination shows up as dark, translucent areas where grain looks cooked or gelatinous.
Bacterial slime appears as a shiny, sometimes yellowish coating that spreads across the surface.
Metabolite pooling looks like small puddles of colored liquid, often yellow or brown, sitting on or around colonized areas.
First, isolate the tub.
Move it away from your other projects.
Bacterial spores and metabolites can spread through shared air space.
Second, assess the damage.
If the smell is faint and limited to one corner, you might salvage the tub by removing the affected area and improving airflow.
Peroxide will kill the bacterial contamination, but it will not harm the mycelium.
You might not get mushrooms to grow in that spot right away, but the contamination will be eliminated.
If the smell hits you when you open the lid, the contamination has likely spread through the substrate.
